River Club resident Tanya Waxler, a Realtor, simply loves to cook. Her son, Levi, now is on a high-fiber diet, so Waxler has found a creative and tasty way to make meatloaf healthier.
“Levi likes this meatloaf because there is no garlic or onions in it, and it is sweet,” Tanya says.
Chicken apple meatloaf
Ingredients:
1 pound of ground chicken
1 granny smith apple chopped in food processor
2 celery stalks chopped in food processor
2 eggs
1/2 cup bread crumbs
Salt, to taste
Pepper, to taste
Method:
1. Combine all ingredients in large bowl.
2. Mash together and form a loaf.
3. Put in loaf pan and top with 3 tablespoons of barbecue sauce. 4. Bake in oven at 400 degrees for 45 minutes.
