Local optometrist Dr. Dean Consiglio loves cooking up a grilled pizza for his family.

“The best part of this recipe is the creative possibilities and the ease at which the whole family can get involved,” the Greenbrook resident says.

Consiglio says to use pre-cooked or very thinly sliced toppings that don’t require much cooking time on your grilled pizza

Grilled Tomato and Basil Pizza

Ingredients
Pre-made Publix pizza dough
Garlic, diced
Salt and pepper, to taste
Fresh basil leaves
Thinly sliced plum tomatoes
Mozzarella cheese
Grated Romano or Parmesan cheese
Olive oil

Method:
1. Preheat your grill on low heat.
2. On a lightly floured surface, work the dough with your fingers and knuckles. Stretch the dough as thin as possible without making holes.
3. Lightly flour the dough so it won't stick to grates
4. Carry the dough to the grill using your fists, and place it on the grates and stretch out as needed.
5. Cook dough on both sides for two minutes on each side.
6. Remove dough from the grill using tongs and a cookie sheet or pizza slide. Return to kitchen to add toppings.
7. Lightly drizzle olive oil over pizza dough. Add tomatoes and cheese. Drizzle with olive oil lightly over pizza.
8. Return pizza to the grill and cook for six to eight minutes or until crust is desired crispness.
9. Remove pizza from grill, add fresh basil and serve.
