Grapefruit Delight
Ingredients
2 large Grapefruits
2 envelopes of Unflavored Gelatin
½ cup Sugar
¼ cup Cold Water
1 cup Boiling Water
Whipped cream or mayo
Method:
1. Soak gelatin in cold water and set aside.
2. Wash fruit and cut in half. Remove the fruit and juice.
3. Discard the seeds, membrane and skin, being careful not to pull out the “plug.”
4. Add boiling water to gelatin.
5. Add sugar and grapefruit juice.
6. Let stand until mixture begins to thicken then fill empty halves.
7. When firm, cut in half and serve with mayonnaise on lettuce or endive or for a sweeter choice serve with whipped cream.
