TWISS = This Week is Savory ... and Saucy!

I have always professed that I want to be Italian in my next life. It makes perfect sense, actually---food, food, food, our total obsession!

A chef friend from Tampa shared with me that he served a pan of Carrabba’s lasagna and meatballs for Christmas dinner last year and loved it. Hmmm, I thought, he may have something here. I knew the friend’s tip was worthy when three cars behind me in the take-out lane pulled up to do the same---one of them a local restaurant owner. When lasagna is that good, why bother making a mess at home?

Sure enough, our Christmas dinner was stress-free. I picked the pan up the night before (cold), and popped it in the oven for one hour before we ate. We dug into ooey-gooey mozzarella and ricotta cheeses, layers and layers of goodness with the best pomodoro sauce in town---really! (Okay, I also buy that by the quart.)

The hubby says it needs more meat, but he is an Irishman and of course thinks a platter of prime rib needs more meat. I say it is perfect. I applaud the easy solution to a holiday meal, though next year I will whip up some sausage and peppers to go with the lasagna. Hey, you can never be too Italian.
