This week we went in the kitchen at Duval's New World Cafe with operating partner Josh Halbrucker and chef Nils Tarantik as he prepares their Spice Rubbed Goldentile, a gulf-caught fish dish with shoestring vegetables, sweet soy glaze and crispy cellophane noodles.

Duval's New World Cafe outgrew its location in south Sarasota before recently moving onto Main Street in downtown Sarasota. The restaurant's menu includes local fresh fish selections, Scallops Rockefeller, Scottish Salmon, Lobster Tails, Crab Stuffed Shrimp, Prince Edward Island Mussels and other mouthwatering dishes.

Duval's new World Cafe is open seven days a week, with a Sunday brunch from 10 a.m. to 3 p.m.

Spice Rubbed Goldentile with shoestring vegetables and crispy cellophane noodles

Goldentile ingredients:
1-2 goldentile filets
3 teaspoons olive oil
Blackening seasoning to taste (salt, pepper, paprika, red pepper flakes, garlic powder, thyme, cayenne pepper and sugar)
1/2 cup cellophane noodles for garnish

Sauteed vegetables ingredients:
1 ounce zucchini, cut lengthwise in pieces
1 ounce red pepper, cut lengthwise in pieces
1 ounce carrot, cut lengthwise in pieces
1 ounce jicama, cut lengthwise in pieces
Salt and pepper to taste

Sweet soy glaze ingredients:
1 cup brown sugar
1 cup soy sauce



Preparation:
Heat oil over medium-high heat. Add mixed vegetables and salt and pepper. Sautee 1 to 1.5 minutes. Remove from heat and set aside for plating. Next drizzle the filet(s) with oil and rub with blackening seasoning. Grill 2-3 minutes on each side until the edges are golden brown. Deep fry cellophane noodles for use as garnish.

Plating:
Arrange some shaved Napa cabbage in the center of the plate, top with the shoestring vegetables, top with grilled fish, drizzle with sweet soy glaze and garnish with the cellophane noodle. Your guests will be impressed!
