WATCH: On the road with Polpo Pizza Company

Over the last few years, food trucks have continued to increase in popularity. Without the overhead cost of a traditional brick-and-mortar restaurant, more and more chefs are taking their kitchens on the road to serve up tacos, sliders, barbecue, and now, wood-fired pizza.

Polpo Pizza Company, Sarasota's newest option for artisanal pizza, is the latest in a small, but growing group of chefs around the country who are applying the new-school food-truck model to traditional wood-fired pizza — and they look good doing it.

Housed in a restored 1951 Ford flatbed, their custom-fabricated rig sits over the flatbed's frame and discretely accommodates everything needed to cook traditional Neapolitan pizza, including an imported Italian wood-burning oven. The vintage truck, paired with its rustic furnishings creates an attention-grabbing aesthetic to help set the stage for their true pride point: traditional Neapolitan pizza.

Owners Danni Bleil and Tom Baril say they're committed to the high standards of the style, and they have an eye for detail and quality. Bleil makes nearly every ingredient by hand and sources from local farmers to create their pies, which they embellish with creative toppings and sauces. After opening earlier this month, the couple says they're focused on cultivating a following. They plan to focus the majority of their business on catering private events, but they'll also make the occasional public appearance — catch them this weekend at Sarasota Pizza Wars.
