LAKEWOOD RANCH —Spyder Broussard and Polo Grill and Bar chef/owner Tommy Klauber are counting down the days until they bring a taste of Broussard’s Louisiana roots to the East County.
Because on July 11, they’ll team up for the eighth annual Spyder Broussard Low Country, East County Fish Fry and Shrimp Boil. Klauber cooks, while Broussard “supervises” and greets guests.
“We always have so much fun doing it,” Klauber said. “Everybody has a great time. It’s relaxed. The music is upbeat — just makes your feet tap."
“It’s pickin’ and drinking and socializing; that’s what makes it fun,” he added. “People now think of it as an annual party.”
The menu consists of new options such as “smack-your-mama collard greens” and garlic-cheddar bear bread, as well as event staples — Boudin sausage, muffalettas, cornmeal-crusted catfish, Zatarain’s boiled shrimp with sweetcorn and Andouille sausage and crawfish corn dogs.
Guests will sit at community tables, covered with newspapers and adorned with rolls of paper towels for hand-wiping.
Broussard, Klauber’s relative by marriage, is eager to greet old and new friends alike. In fact, he already has 20 people
“We’re going to need two tables,” he said.
Reservations for the event are required because seating is limited. Klauber hopes at least 300 people will attend.
