A lot of people struggle with their first introduction to sushi. But after the initial raw-fish trepidation and ordering intimidation, this brand of Japanese cuisine tends to have a pretty high conversion rate. And once you fall in love, it's tough to imagine there's anything that could make the dining experience even better.
YO! Sushi, which recently opened a location at the Mall at UTC, has accepted that challenge, offering guests sushi via conveyor belt. Yes, you read that correctly. Just when you thought sushi couldn't get any better.
The international chain offers a wide variety of Japanese dishes, which are prepared in a central, exposed kitchen and placed on a conveyor belt on price-coded plates. Customers can dine at a booth, or alone at the bar, where they can interact with the sushi chefs.
We sat down with Group Executive Chef Mike Lewis to talk about the new restaurant and what guests can expect.
