Families and residents got their crawfish fix with the 5th annual Cajun Crawfish and Seafood Festival at St. Martha Catholic School Saturday, April 16.

The festival featured local seafood restaurants, but the main attraction was the crawfish cooked fresh by the Crawfish Company of Central Fla. Inc.

Owner Rick Boyd helped prepare the 840 pounds of Louisiana crawfish for the event.

“Those ones are just waiting their turn to make a trip to the ‘health spa’,” Boyd said.

The ‘health spa’ Boyd refers to is the boiling pots of water where the crawfish are seasoned and cooked with corn, potatoes, garlic, onion and smoked sausage.

“A lot of Louisiana people have a hard time finding this here in Florida so they get their fix this way,” Boyd said.
