Drink This: Spiced Mango Falernum

This cocktail shows off the versatility of tequila.

When most people hear tequila, they think of one of two things — margaritas or shots. But this south-of-the-border beverage is more versatile than it gets credit for. It's also a great option for craft cocktails, especially when taking advantage of tequila infusions.

Making the infusions is as creative as the cocktail itself, so don't be afraid to step out of your comfort zone. This refreshing drink combines chipotle peppers and mangos with the kick of tequila for a cocktail that proves that spicy is great for more than just bloody marys.

Spiced Mango Falernum

  • 1 ½ oz. mango-chipotle infused tequila
  • 1 oz. golden falernum — a rum-based liqueur with flavors of ginger, lime, almond and clove 
  • ½ oz. simple syrup
  • ½ oz. fresh lime juice

In a shaker, combine all ingredients with ice and shake well. Strain over fresh ice and garnish with lime wheel

 

Chipotle-mango tequila infusion

  • 1 bottle of your favorite tequila, preferably silver
  • 2 to 3 ripe mangos, peeled and pitted
  • 1 chipotle pepper

In a large mason jar, infuse tequila and mangos for five to seven days in a cool, dry place. On the last day, add the chipotle pepper to the infusion and let rest for the remainder of the day. Strain the infusion and enjoy!
