Inspired by the beautiful colors of the sunset on Siesta Key Beach, this cocktail is a refreshing way to enjoy all the beauty of the island in one simple drink. Made with coconut, rum and pineapple juice, this is the perfect libation to kick off the spring season. Matthew Serrano, general manager and bar chef at The Table Creekside, shows you how to make one yourself.
Ingredients (makes one cocktail):
1 oz. gold rum
1 oz. amaretto
2 oz. pineapple juice
1/2 oz. cream of coconut
1/2 oz. lime juice
Mix all ingredients together in a shaker with ice.
Strain over fresh ice in your favorite tropical glass.
Use maraschino cherries, sliced pineapple and toasted coconut for garnish.
Enjoy!
